- 8 eggs, hardboiled
- 1 avocado
- 1/3 cup plain Greek yogurt
- 2 teaspoons lemon juice
- ¼ onion, diced
- salt and pepper to taste
Hard boil 8 eggs, remove the shells, and cut them in half lengthwise. Scoop out the yolks and reserve them in a bowl. Peel and pit the avocado. Add it to the yolks and blend using a hand blender or food processor. Puree until smooth. Add the lemon juice, plain Greek yogurt, diced onion, and salt and pepper. Mix until combined. Spoon the mixture into the middle of each egg white, sprinkle with paprika, and keep refrigerated until ready to serve.
