It’s November and Time for Turkey!
It only takes about an hour from start to delicious finish to get these protein-heavy turkey enchiladas on your table. Make it your own with the addition of sriracha, black beans, or salsa; you can easily customize this dish.
Turkey Enchiladas Ingredients
Our favorite recipes don’t take long to make, and don’t need a ton of ingredients either. Turkey Enchiladas fit the bill:
- cooking spray
- 12 corn tortillas
- 1 can enchilada sauce
- 1 lb. ground turkey, cooked
- 2 cups shredded cheddar cheese
- 3 tomatoes, diced
- 1 onion, chopped
- 1 green bell pepper, chopped
Let’s Get Started
Preheat your oven to 325 degrees F. Spray both sides of each tortilla with cooking spray. Lay your sprayed tortillas on a large cookie sheet (there will be some over lapping) and bake them for 5 to 8 minutes. Check frequently to ensure they’re not getting crispy. Remove the sheet from the oven, and allow the tortillas to cool slightly. They’ll be easy to work with and they won’t break on you.
Increase your oven’s temperature to 375F. Dip each tortilla separately in enchilada sauce. Place 2 to 3 tablespoons of ground turkey down the middle. Layer the cheese, onions, tomato, and the bell pepper. Be sure to reserve 1/2 cup of cheese to sprinkle over top, and roll it up. Place in a greased 9×13 baking dish. Repeat for all remaining tortillas. Pour remaining sauce over the tops of the enchiladas. Sprinkle remaining shredded cheese on the top. Bake uncovered at 375 degrees F for 20 to 30 minutes until heated through and the cheese is melted. Garnish with cilantro, olives, tomatoes or your favorite alternative.
