Sweet Potatoes + Black Beans
It’s cold! Warm up with an easy, healthy chili. It’s a perfect winter recipe and you probably have all of the ingredients at home already.
Winter Recipe: What You’ll Need
1 tablespoon + 2 teaspoons of extra-virgin olive oil
1 sweet potato, peeled and diced
4 cloves garlic, minced
1 onion, diced
2 tablespoons chili powder
4 teaspoons ground cumin
½ teaspoon ground chipotle chili
¼ teaspoon salt
2 15oz cans of black beans, rinsed
1 can diced tomatoes
4 teaspoons lime juice
½ cup chopped fresh cilantro
Heat your oil in a large pot over medium-high heat. Add the sweet potato and onion then stir often until the onion starts to soften, about 3 to 5 minutes. Add the garlic, chili powder, cumin, chipotle, and salt. Stir constantly for 30 seconds, then add water and bring to a simmer. Cover, reduce heat to maintain a simmer and cook until the sweet potato is tender, about 10 minutes. Add the black beans, tomatoes and lime juice; increase heat to high and return to a simmer, stirring frequently. Reduce heat and simmer for about 5 minutes or until slightly reduced. Remove from heat and stir in cilantro and enjoy your chili.
