June’s Healthy Recipe of the Month!

Ingredients:
- 1 lb Roma tomatoes
- 1 cucumber
- 1/2 red onion, sliced
- 2 avocados, diced
- 2 Tbsp extra virgin olive oil
- 2 Tbsp lemon juice
- 1/4 cup (1/2 bunch) cilantro, chopped
- 1 tsp sea salt or 3/4 tsp table salt
- 1/8 tsp black pepper
- 1 tbsp apple cider vinegar
- 1 chicken breast, cooked and shredded
Directions:
This healthy recipe is easy to whip up in just a few minutes. Start by placing chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, shredded chicken, and chopped cilantro into a large salad bowl.
Drizzle those ingredients with 2 Tbsp olive oil, 2 Tbsp lemon juice, and 1 tbsp apple cider vinegar. Toss gently to combine. Just before serving toss with 1 tsp sea salt and 1/8 tsp black pepper.
