Ingredients
- 2 Tbsp olive oil
- 1 onion, diced
- 6 cloves garlic, chopped
- 1 tsp sugar
- 1 Tbsp chili powder
- 2 tsp oregano
- 1 Tbsp ground cumin
- 2 tsp ground coriander
- 1 lb ground turkey
- 3 Tbsp tomato paste
- 2 green bell peppers, chopped
- 2 cans fire-roasted tomatoes, not drained
- 1 butternut squash, cubed into ½ inch squares
- 2 cups turkey broth
- 2 cans black beans, rinsed, drained
Butternut Turkey Chili Directions
Heat olive oil in heavy pot until hot. Stir in onion, garlic, sugar, chili powder, cumin, oregano, and coriander. Add ground turkey, sprinkle with salt, and stir. When turkey is cooked through, add tomato paste, bell peppers, broth, and tomatoes. Bring to a simmer and cover for 20 minutes. Add beans and squash, and simmer covered another 20 minutes. Serve warm, with shredded cheddar if desired.
