Gather Your Ingredients
- 4 medium zucchini
- 1 pound ground beef
- 1/2 cup chopped onion
- 3/4 cup marinara sauce
- 1 egg, beaten
- 1/4 cup bread crumbs
- Salt and pepper to taste
- 1 cup (4 ounces) shredded Monterey Jack cheese, divided
- Additional marinara sauce
Beef Zucchini Boats Directions
Preheat the oven to 350, and cut the 4 zucchini in half lengthwise. Scoop out the pulp (do not discard) before putting the shells in a baking dish. Meanwhile, in a large skillet, cook the beef, onion and the zucchini pulp over medium heat until meat is no longer pink. Remove from heat and drain. Stir in the marinara, egg, bread crumbs, and 1/2 cup of cheese. Add salt and pepper if desired. Spoon 1/4 cup into each zucchini shell. Bake uncovered at 350 for 25-30 minutes and top with remaining cheese.
