This quick crockpot recipe is great for meal planning! It contains only simple, easy-to-find ingredients and has a taste the entire family will love.
- 3 lbs beef stew meat, diced
- 1/3 cup flour
- 1 onion, chopped
- 4 garlic cloves, crushed
- 1 sweet potato, peeled and diced
- 1½ cups baby potatoes, halved
- 2 large carrots, sliced
- 1 red pepper, diced
- 1½ cups beef broth
- 1 can diced tomatoes
- 1 beef bouillon cube, crushed
- ½ teaspoon paprika
- 2 bay leaves
- fresh chopped parsley to taste
Place the meat and flour into your crockpot. Stir to coat meat and add in the rest of the ingredients (except for the bay leaves and parsley). Stir all ingredients together and place bay leaves on top. Cover, and cook on low heat setting for 8-10 hours, or high heat setting for 4 to 6 hours. Garnish with parsley, and serve over rice.
