It’s finally June, and when you’re done at the pool you’re looking for an easy recipe that requires very minimal time in the kitchen. No elaborate dinners allowed – if you can’t eat it outside, we don’t want it. Save that nonsense for fall, grab your favorite fruit, and take fifteen minutes to whip up this summer berry salad.
Summer Berry Salad Ingredients
- 10 oz baby spinach, torn
- 1 cup strawberries
- 1 cup blueberries
- avocado, chopped
- 1 cup raspberries
- 1/2 cup toasted, sliced almonds
- chopped basil (to taste)
- 4 oz goat or feta cheese
- olive oil based vinaigrette
Directions
First, wash and slice your strawberries. Next, tear and divide the baby spinach between four plates. Top with berries, almonds, basil, and chopped avocado. Crumble cheese of choice on top, and drizzle with your choice of a vinaigrette.
